Indian Butter Chicken

Ingredients:

For the Marinade:

  • 500 grams boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup plain yogurt
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste

For the Sauce:

  • 4 tablespoons Green Garden ghee butter
  • 1 onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can (250 grams) crushed tomatoes
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the chicken pieces with the yogurt, lemon juice, garam masala, cumin, paprika, turmeric, salt, and pepper. Stir well to coat the chicken in the marinade. Cover and refrigerate for at least 1 hour or up to overnight.
  2. In a large saucepan, melt the ghee butter over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add the minced garlic and grated ginger and cook for another minute, stirring frequently.
  3. Add the garam masala, cumin, paprika, turmeric, and cayenne pepper to the saucepan and cook for 1-2 minutes, stirring constantly, until fragrant.
  4. Add the crushed tomatoes to the saucepan and stir to combine. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.
  5. Add the marinated chicken pieces to the saucepan and stir to coat them in the tomato sauce. Simmer the chicken in the sauce for 15-20 minutes, stirring occasionally, until the chicken is cooked through.
  6. Stir in the heavy cream and simmer for another 5-10 minutes, until the sauce has thickened slightly. Season the sauce with salt and pepper to taste.
  7. Serve the Indian Butter Chicken hot, with basmati rice and naan bread.
